Currently, the organized sector accounts for about 18 – 20 percent of milk. The average yearly incremental increase in production is estimated at 6-7 million tons in the next few years. Considering this NDDB (National Dairy Development Board) has launched many schemes to encourage milk producers to associate with the organized sector so that a better quality of milk & milk products can be made available across the country.

The organized sector means all those who are procuring milk from farmers and bringing it to their processing plant for manufacturing liquid milk and various milk products which they sell to consumers.

The major challenge with these milk processors is to collect good quality milk so that they can produce good quality milk products with a longer shelf-life. This will be possible not only by collecting milk based on FAT/SNF and the bacteriological quality of milk which is possible only by handling milk from the udder of the animal to the end consumer.

Importance of Milk Cooling

Milk is highly perishable having a self-life of four hours and also under high ambient temperature which goes up to 40 – 45°C, improvement and retention of the quality of milk will be only possible by taking utmost care at the farm level as well as cooling milk to 4°C as soon as possible which prevents further growth of bacteria and improves the self-life until the proper cold chain is maintained.

This requirement will keep on increasing as NDDB & Government Agencies are launching various schemes for dairies as well as farmers to channel more milk to the organized sector.

Technical manpower is required for manufacturing & testing, installation & commissioning, scheduled maintenance,  attain breakdown calls, etc.

Personnel required for other activities such as sales & marketing, route selection, infrastructure development, etc both at the end of equipment manufacturers as well as milk processor end.

As such, there is no specific course or curriculum available in our country to train the personnel required for the smooth running of these BMCs.

Aspirants having technical qualifications such as ITI/Diploma/Degree in Refrigeration/Mechanical/Electrical field is quite suitable to take on this field.
